Chocolate Covered Strawberries

Luscious fresh strawberries. Great on its own but EVEN better when smothered with chocolate.

Managed to get a few (ehem I mean one) beautiful chocolate covered strawberry before the phone rang!

Slight disaster! Whoops, chocolate cooled when I was on the phone and ended up with lumpy choc covered strawberries instead. Not as pretty, but tasted oh so good!

Aero Mint Milkshake, fit for Shrek!

Milkshake tastes better in a jar than a normal glass. Fantastic way to reuse your Baked By Me glass jars!

Please don’t ask me for a milkshake recipe, as I just throw ingredients in the blender. Whatever goes 🙂 This Shrek milkshake has Aero Mint, soft scoop vanilla ice cream and milk.

Peach Galette

Baking day usually calls for chocolate. Decided to do something different and make the most of summer fruits! This time, peach and it will be showcased in a galette! This calls for rich, crisp and crumbly, buttery Pate Brisee (shortcrust pastry). Made the pastry and chilled in the fridge for an hour.

Time to prep the peaches. 1) Slice

2) Soak in brown sugar & lemon! Add a tablespoon of flour. Voila. They are done.

I cannot seem to find a picture of me preparing the pastry or rolling it out! My hands must have been filled with flour. Managed to get a picture of the little peach galettes before they were baked.

Waiting time of 20 minutes and then my mini galettes will be ready.

Enjoyed one warm out of the oven! They definitely taste as good as they looked.

The rest were served cold with store bought caramel ice cream. Ooh la la, I went to bed with a big smile on my face.

Summery Nectarine Loaf Cake

Love summer fruits 🙂 Bought quite a few nectarines from the food grocer with the intentions of making something. It is always like that, had no idea what I was going to bake. Was a tough decision between a galette or a cake. In the end, I settled for easy summery loaf cake!

A lot of people asked whether the nectarines were roasted before hand. I did not and just arranged them on top of the cake batter before baking.

Delighted that the topping of nectarines came out well and did not sink to the bottom of the cake. This turned out to be such a beautiful cake, I think I actually cooed at my cake.

The taste was fantastic. Really soft & moist summery cake. Must remember to make this again, and gift this cake to a lucky person!

Oatmeal & Raisin Cookies with Baked By Me baking mixes!

I previously blogged about our Maltesers cookies, and it was well received! Thank you so much for the support. I do find it rather challenging to keep this blog updated. Bloggers out there, I have so much admiration for you. It is indeed lots of hard work and dedication to find the right material, keep readers entertained and enjoy yourself at the same time.

This post will include a picture tutorial of our Oatmeal & Raisin Cookie Mix. They are available in our gorgeous glass jars or little baking bags. They both make 16-18 scrumptious cookies.

You will just need to follow the easy instructions provided, you will not go wrong! I love taking ‘aerial view’ photographs of everything you need. 1) baking mix 2) softened butter 3) an egg 4) wooden spoon (check, check, check & check!) Mix the butter and egg together.

Add the rest of the ingredients from the jar or baking bag. Combine well and enjoy the lovely aroma.

Once everything is combined well, chill the cookie dough in the fridge for half and hour or even longer if you need to come back to this later.

You can preheat the oven and line a tray with baking paper.

Roll the chilled dough into walnut sized balls and bake in the oven!

They were just perfect, a good crunch on the outside, soft and ever so slightly chewy in the middle, the plump raisins were studded throughout and the cinnamon flavour was perfectly complimentary.
